Ingredients
- 3 tablespoons butter (Crooked Face Creamery)
- ½ medium sized onion, medium dice
- 1 cup kimchi + 2 tablespoons kimchi juice (Tender Soles Farm)
- ½ cup chicken or pork (Abraham’s Creamery)
- 2 cups cooked, cooled rice
- 2 teaspoons soy sauce
- 1 teaspoon sesame oil
- 2 teaspoons vegetable oil
- 2 eggs (All in Thyme)
- Salt
- Crumbled nori & sesame seeds for garnish
Instructions
In a nonstick sauté pan, melt the 3tbs butter over medium-low heat. Add the onions and cook, stirring occasionally for about 2 minutes. Add in kimchi and kimchi juice and continue to cook until the mixture comes to a slight boil, around 3 minutes. Add meat of your choice (pre-cooked) and cook until the sauce has almost evaporated, about 5 minutes.
Continue to stir occasionally for about 5 minutes. Now add in the soy sauce and sesame oil. Add more kimchi juice to your liking. Lower the heat slightly.
In a separate small nonstick sauté pan, heat the vegetable oil over medium heat. Add the eggs, cook to your liking and season with salt. Serve the rice topped with fried eggs, nori, and a sprinkle of sesame seeds.
