Beef Skirt Steak – .85 to 1 lb

Jersey beef is the most rich, flavorful beef you can find.  The fat from a jersey is high in beta carotene and a rich yellow color, just like the fat in their milk.  Steaks tend to be a little on the smaller side, averaging about 1 lb each.
