Pak Choy, garlic, pork leaf fat special

This organic veggie comes 2 in a compostable bag together with a small garlic and 1-2 ounces of pure pork leaf fat  for pan sautéing .   Leaf fat is from Old Crow Ranch in Durham. Steam the choi for 3 minutes then chop. Melt the pork fat in a pan and saute the chopped choi and garlic at medium to high heat for about 3-5 minutes ( the greens are wilted like cooked spinach and the garlic and bok choi stems are cooked through.  Can add soy sauce, oyster or hoisin sauce for an added Asian flavor. Delicious and healthy.
