This was freshly dug from our high tunnel green houses, washed and trimmed to 4 oz . No pealing needed .Freeze after two weeks in refrigerator. Just grate what you need. Use the whole root. Will have harvested all by end of October.

Medicinal properties (anti inflamatory) as well as a culinary ingredient for indian and asian foods, Adds a bright yellow color to foods. Used in teas, soups, and sauces. The roots should be frozen for long term use and easily grate while still frozen. The major healthful ingredient, curcumin, is more effectively absorbed with some ground pepper.
