May include: Nero di Tuscana, Red Russian, White Russian, Dwarf Blue Curled Scotch, Scarlet, Rainbow Lacinato, Dazling Blue, and Madeley varieties.

The bunches include leaves that range in all sizes due to the constant changing plethora of varieties grown. The most abundant plants that are at their prime in growth, optimum health are chosen at harvest to include in the bunch. A bag may be utilized if smaller leaf varieties are harvested.

These are inspected after harvesting, but are unwashed, so rinsing is recommended. Pesticides organic or not are never used on the farm.
