At Wolf Pine Farm, set along the Mousam River in Alfred, Maine, they raise the pigs that create this incredible fat. Their pigs spend most of their lives in verdant pastures, raised organically with organic feed all the way, where they “express the piggyness of the pig,” as nature intended.
In my kitchen I gently cook the raw internal fat that naturally occurs around the pig’s kidneys, rendering out the pure oil, that when cooled to it’s solid state, is known as “Leaf Lard.”
