Natural Process Bolivia – Stonecutter Coffee Series

Our Stonecutter Coffee is a rotating highlight coffee series – a tribute to the rich history of Deer Isle’s granite quarrying industry that peaked in the early 1900s. These beans are selected for their “je ne sais quoi” and often come to us from unique coffee producing regions of the world and embrace inventive processing methods. Limited amounts available, changing frequently, and now packaged in our one of a kind Stonecutter 10 oz. coffee tubes!

These tubes are a new package adventure for us. Designed and hand drawn by Deer Isle local Farrell Ruppert, they feature the slabs of granite quarried out of Stonington. Made of 100% FSC certified paper, soy ink, with gold foiled accents and a sticker of the current origin inside. For every tube made, a portion of profits are donated to One Tree Planted.

This month we are highlighting our producing partners in Bolivia. The Asociación Integral de Productores Ecológicos de Pumiri (AIPEP) is located in the small village of Pumiri tucked away in the Yungas mountains in the province of Caranavi in Bolivia. The small and mighty organization was founded in 2002 and since its inception has upheld excellent quality control and organic and fair-trade certification, maintained by only 49 farmers. Their coffees tend to be top finishers in national competitions. AIPEP has developed a Specialty Coffees Program with a few members who had previous experience in preparing lots of coffee for regional and national events. As a part of this initiative they sought support to help develop infrastructure to prepare specialty coffees under this program more meticulously. This led them to submit a proposal to Cooperative Coffees for help in financing the construction of 30 covered drying tables. These smaller producers have been selected for their commitment to good processing techniques. Their farms are between 1200-1550 meters above sea level. Their farms are also considered local examples in good agroecological practices, with active reforestation and fertilization and limited chaqueo, a practice of slash-and burn clearing that is all too common in Bolivia.

 

Natural Process Bolivia – Stonecutter Series Coffee – light roast
This coffee is a natural process coffee which involves drying the cherry around the bean. It requires ideal climate conditions to permit the cherry to dry properly. Harvest is conducted by ensuring the ripest cherries are selected, leaving the node intact. Once picked the cherries are floated in wooden tanks to remove any floaters, insect damaged and/or underdeveloped beans. They are further selected before being laid out on drying tables under full sun exposure. Cherries are moved every few hours to ensure homogeneous drying. Overall the drying process will last between 18-23 days, depending on the climate conditions and sun exposure. Once dried, AIPEP warehouses and stores the green beans until ready for export.

We roasted this coffee with high heat throughout the roast to increase its natural fruity sweetness that is common in natural processed coffees. We smell and taste ripe honeydew melon and amazing spice notes of tamarind. For those who don’t know, tamarind is a leguminous tree bearing edible fruit that is indigenous to tropical Africa and naturalized in Asia. Tamarind has a unique, sweet-sour flavor similar to tangy lemon or lime, balanced by sweet caramel notes, or a cross between lemon, apricot, and dates, with some mild earthiness. The coffee has a beautiful tea-like body. With a mild acidity and yet a richness, we really enjoyed this coffee in the lighter spectrum on the roast.
