My spin on traditional “ruskie” pierogi. (“Ruskie” means Russian in Polish:) Perennial favorite! These are filled with a ricotta, potatoes and onion. Super quick dinner: just throw in boiling water for a few minutes and serve with melted butter or olive oil. Or, better yet, after boiling, pan-fry in butter or oil with some chopped onion.
