Sunchokes, 2 lbs., Red Nova Scotia


These tubers from the sunflower family can be eaten raw or cooked, sliced or grated into a salad or a stir fry. Crisp like a radish when raw with a taste between carrot and potato. They cook quickly, so add them at the end of cooking as you would snow peas. Or, take advantage of their quick cooking and add them at the beginning of a soup, where they will dissolve, thickening the soup, but without starch—a benefit for diabetics. 2 lb poly bags. Sunchokes are a vegetable native to North America and were cultivated by the people of  the First Nations.  Also sometimes called “Jerusalem Artichokes” but they are neither an artichoke nor are they from Jerusalem.
