Rosa Bianco Eggplant from Pinnacle Farm

It is eggplant season in Tucson! Small rosy colored eggplant.
If you are not sold on eggplant, try hard roasting on a grill until the skin blackens and their creamy texture comes out. They will be soft and luscious and take on a smokey flavor from the grill. Use them with fresh tomato sauce on pasta or make a Middle Eastern Baba Ganoush with them. Sold in a 1.5lb bag.
