These are dug by a farmer 1.5 miles from the farm. Let’s talk fresshhhh, and local. These are dug every Wednesday and/or Thursday of the week, and kept on ice and seaweed. Clams are never kept longer than 2 days for optimum freshness. We do our part to dig these sustainably and safely (being adequately licensed and noting the closure days/areas daily).
