- Takuan is a Japanese side dish traditionally served as an appetizer, a palate cleanser between courses or post-meal . Our version uses garlic scapes which add a slight sweetness to the ferment. It is crisp, fresh tasting, and is especially refreshing on a hot summer day.

- Excellent on black bean (or meat) tacos/burritos a la pickled onions
