The Schoodic Baking Company is a sourdough bread bakery and patisserie based out of Gouldsboro, Maine. The coastal air on the Schoodic creates the perfect environment for naturally leavened sourdough bread. Our sourdough starter began in Gouldsboro and the delicate tang of our airy loaves is unique to the Schoodic.

Our sourdough bread is extensively fermented over the course of 2 days, carefully formed and then baked in a stone oven with steam. The long fermentation in the fridge coupled with the steam when baking yields our signature crusty bubbly exterior with a moist interior.

In addition to our sourdough bread we also make various pastries including croissants and scones. Our croissants are hand rolled and laminated with high quality butter that yield a light and flaky pastry with honeycomb interior. We fill these with Chocolate for our Pains au Chocolat, Almond Creme for our Almond Croissants and cinnamon, sugar, and orange zest for our Morning Buns.

Our scones are carefully hand mixed and formed in small batches to ensure the most delicate and tender texture. They come in a variety of flavors that are perfect for breakfast or anytime of day.

Katie Shoemaker, head baker and owner of Schoodic Baking Company has been baking bread for well over 12 years. Sourdough bread has been a staple in her home for the family’s daily bread since she taught herself how to make bread and she is happy to share her love of bread with all. Each loaf and pastry is formed with care and we are sure you will notice the difference in our small batch bakery.
